Fascinating stuff. What AI library are they using?
I always get my BMI index wrong. I have a high bone density and lean muscle mass which always results in overweight even though my doctor saysI am in great shape. I get to work harder to stay afloat in water though.
I think different ethnicities should have a different way of calculating their BMI. Now I am imagining an overweight Tutsi might look like an underweight Xhosa just going by facial features :D.

I am not sure of the details but my bet is some machine learning python lib; therefore it's accuracy improves with more learning dataset; and of course like you said they need to segment based on ethnicity/race/etc.

This is really impressive - a Kenyan AI company. There are many tools & libs that can do this perfectly. Obviously AIs blend mountains of data to calibrate for accuracy. Race and ethnicity and such unique features would be discovered soon enough if they are important dimensionalities.
Health is a major application area for AI. It's good we have smart ICT CS like Joe Mucheru and now the Ndemo AI taskforce. Overall the state of AI global looks like this. US and China lead but Israel is the behemoth per capita - the IDF even uses drones to deal with Palestine riots. With focus maybe Kenya might pop up as the African leader in the future.
